Last weekend, I took part in The Pretty Simple Dinner Party, a virtual dinner party to celebrate good food and good people. In a time where we need unity and community, we wanted to celebrate coming together around the table! It's all based around the brand new cookbook A Couple Cooks - Pretty Simple Cooking: 100 Delicious Vegetarian Recipes to Make You Fall in Love with Real Food by Sonja and Alex Overhiser. You noticed the 'vegetarian' in that title, right? Bear that in mind and keep reading. To be a host, I just needed to buy the book and cook dinner in my home for at least one other person on that night, using one recipe from the cookbook! I ended up making half a dozen recipes and having five people over for dinner...plus my four. It was a full table and we all had full bellies after. I was happy to be one of the 350 dinner parties; there were parties in every state plus twenty-five other countries. Wow! I had some of our best friends over an unforgettable feast. And one of the best things I can say: none of my omnivores missed the meat. Really. No one even realized it was a vegetarian menu until I mentioned it at the end of the evening. All of the recipes were easy to make and delicious. This cookbook definitely earned its place on my easy-to-reach cookbook shelf.
Being an Indianapolis-native, I have a soft spot for A Couple Cooks.Putting that slight bias aside, A Couple Cooks has been my go-to food blog when I'm craving a certain type of food and need a little extra inspiration. I was so happy to hear that they were publishing a cookbook to add some color to my kitchen and to also have a hard copy for myself to make notes and other small writings during my process.Reasons to love this cookbook:- It's visually stunning. The photos, the watercolor images, the overall theme- The recipes don't call for a ton of ingredients. I like to keep my food simple (and follow recipes that allow me to add my own twist/spin/replacements) and this book does just that.- Vegetarian / vegan. Some of the recipes call for animal products, but it's quite easy to replace them for the same recipe.- All courses are covered: breakfast, snacks/apps, salads, main entrees, desserts, drinks...it's all in there for a full meal experience!
I've been waiting for this cookbook! I like to eat vegetarian more days than not but struggle to turn veggies and beans into a filling meal. There are so many options in this book for filling vegetarian dishes that are going to change my boring meatless meals into delicious food that is exciting to eat. I also love the philosophy about food that is promoted by Sonya and Alex. Make cooking an event where you bond with your loved ones so it's no longer a chore. Slow down. Eat real food. Love yourself. All lovely ways to improve your mentality and relationship with food if you struggle with emotional eating (like basically all of us!).
Eating healthy is something that is still relatively new for me. I struggle with knowing what to do and how to put fresh ingredients together. A Couple Cooks story and creativity is inspiring. I love the notes after the recipes on ways to make substitutions for dietary needs or simple modifications to completely transform the dish. For example, they have a note on the whole wheat naan and how to transform the naan into naan pizza-I mean Naan! Mmmmm. And pizza! Mmmmm. I can’t wait for that to appear in my kitchen. The main dishes being separated by the amount of time it takes to prepare them is genius. I often find with other recipes that I have no idea how long it takes, and if I’m hungry before I start, I’m ravenous by the time the food is ready. Now I can flip to a scrumptious quick fix after work, not compromising good quality for time, or a recipe for a special occasion that I want to put more time and effort into (I can’t wait to make the veggie lasagna again!). I am excited to get brave and make more recipes from Pretty Simple Cooking. Also, the irresistible almond dip is a staple at any social gathering I go to now. My friends and I can’t get enough!A Couple Cooks message of keeping things fresh and simple, not overthinking ingredients or cooking, is challenging the way I think about cooking.
I love, love, love the way this book is laid out. Each chapter lists the recipes in order of quickest to most time-consuming to make, which helps immensely in not only setting my expectations for how much time to set aside to cook, but also in helping me know where to start. I have bought so many cookbooks in the past, only to let them sit on my shelf and gather dust, because I don't know which recipe to start with and they all look so complicated and time-consuming. This book makes me WANT to jump in and try new recipes -- starting with the easiest ones first! I started with the California Toast recipe for my kiddos and it was a big hit! Also, this book is BEAUTIFUL and will be doubling as a decoration on my kitchen counter for months to come.
Just received my cookbook in the mail and truly had a giddy moment!! Everything about this cookbook is beautiful, timeless, refreshing, and fun! I absolutely love the simple lessons at the start of each new chapter (and the pretty drawings that accompany them!). My husband and I are vegan, and the vegan recipes in this cookbook look AMAZING. I've been cooking off of the A Couple Cooks blog for about 2 years now, and having a tangible book to keep in the kitchen with me is going to be a gamechanger. A few recipes I can't wait to make are the Smashed White Bean Salad Sandwiches (perfect for a picnic!), the Homemade Whole Wheat Naan (we have an Indian food obsession in our house), and the Crispy Cumin Chickpeas. There's no cookbook out there quite like this one, so if you're looking for a vegetarian cookbook that has a good mix of accessible, crowdpleasing, and mouthwatering recipes-- look no further!
